Easy and Healthy Mexican Style Dish
Trust me when I say, I am not a good cook. So when I find something easy that I can make myself for lunch/dinner, that tastes amazing, is healthy AND doesn’t take long to make, count me in.
The main dish for today’s Court Can’t Cook are my quesadillas, with a side dish of fresh guacamole. Before I came to Australia, I never even ate guac, but since my girlfriend Michelle made us some from her homemade recipe, I have been HOOKED.…. Guacamole/ avocados are very high in healthy fats which is good for when you are counting your macros/ trying to put good foods into your body, but I wouldn’t recommend eating it everyday, and the side of tortilla chips that you’ll dip it with isn’t the healthiest choices either.

HOMEMADE GUACOMLE🥑:
You will need:
1 avocado (1 avocado per person has been working for us)
Lemon juice (teaspoon approx)
Pink sea salt (to taste)
Pepper (to taste)
Red onion
Mortar and pestle (a fancy bowl to put all the ingredients in and something to help crush it all together and mix)
Tortilla chips or something yummy to dip into your guac!
Directions:
Peel + cut avocado(s) and place in mortar
Grind pink sea salt and fresh pepper on top of avocados
Splash one tea spoon of lemon juice in mortar
Chop a handful of red onion and place into mortar
MIX AND MASH ALL INGREDIENTS TOGETHER WITH PESTLE!
Dip with tortilla chips, carrots, peppers, broccoli, celery, or any dip-able choices!
COURT’S QUESIDILLA’S🤤:
Ingredients:
Shredded mozzarella cheese
Red pepper
Banana peppers (if you don’t like spicy things then don’t add these in)
Baby spinach
Red onion
Chicken (if you are vegetarian take this out to make this a completely vegetarian option)
Franks hot sauce- I loveeee sauces but most of them are very high in sugar and are bad for you, so when I am eating healthy I use Frank’s.
Whole grain large tortilla shells
Directions:
Cut/chop all vegetables
Cut chicken
Place whole grain tortillas flat on baking sheet (use however many tortillas you for the amount of quesadillas you want to make)
Place all prepped ingredients and cheese onto one half of each tortilla
Add hot sauce!
Fold tortilla and put into oven with heat on 350.
Bake for approx 7 minutes and then flip quesadilla and bake for another 5 minutes on the other side.
When it is golden brown and toasty looking it is complete!
