Easy and Delicious Bruschetta Recipe

During quarantine, I have been loving this super easy and delicious bruschetta appetizer. I have tried two different ways of enjoying this snack and you can’t go wrong with either one.

Option 1) Serving on a chopped baguette. If you are hosting an event or party, I’d recommend this style because it is a way easier option for sharing.

Option 2) Serving on flatbread. Sobey’s sells flatbreads that come in a package of two, and if I’m only sharing with one other person, this is the way I usually cook it.

INGREDIENTS YOU WILL NEED:

  • Baguette or Flatbread

  • 3 Roma tomatoes

  • Balsamic Vinegar

  • Balsamic Glaze (I posted a photo of the one I use)

  • Olive oil

  • Salt and pepper

  • Fresh basil

  • Thyme

  • Feta (optional)

PREPARING THE BREAD:

  • Set oven to 400

  • If you are using a baguette: Cut baguette into even pieces and spread olive oil on both sides of each baguette. Toast each side of the baguette for 5 minutes each (when the bread is in the oven you can start making your bruschetta mix). Once done cooking baguette for 10 minutes total, sprinkle thyme onto each baguette.

  • If you are using flatbread: Spread olive oil on both sides of flatbread, and then toast each side in the oven for 5 minutes each (when the bread is in the oven you can start making your bruschetta mix). After the 10 minutes are done, sprinkle thyme onto the flatbread. If you like your bread more crispy, keep flatbread in the oven for longer, but make sure you keep an eye on it so it doesn’t burn.

MAKING THE BRUSCHETTA MIX:

  • Chop Roma Tomatoes into one cup and add into mixing bowl

  • Add 1 tablespoon of Balsamic Vinegar

  • Add 2 tablespoons of Olive Oil

  • Add 3-4 tablespoons of Fresh Basil

  • Add salt and pepper

  • Refrigerate for 10 minutes

Then once your bread is toasted, and your bruschetta mix is created and cooled, you can add the mix to each baguette or add onto your flatbread. After I add my mix, I always top my bread off with the balsamic glaze, and sometimes crumbled feta.
